Brewing

Enzymes are used in beer production to either supplement the naturally occurring malt enzymes, to compensate for less than optimal ingredients or to overcome brewhouse problems such as filterability & haze formation. In addition, enzymes can be used for yeast nutrition and membrane cleaning.

Brewhouse:

  • Enzyme complex for degradation of ?-glucanes, pentosanes and other non-starch-polysaccharides for viscosity reduction
  • Enzyme complex for degradation of ?-glucanes, pentosanes and other non-starch-polysaccharides for lower mashing-in temperatures, especially for corn.
  • Enzyme complex for degradation of ?-glucanes, pentosanes and other non-starch polysaccharides for prevention of glucan haze.
  • Xylanase for degradation of arabinoxylans of barley adjunct at high temperatures.
  • Enzyme complex for degradation of non-starch-polysaccharides, especially xylans of wheat malt and adjunct.
  • Bacterial protease for yeast nutrition improvement.
  • Fungal exo-peptidase for yeast nutrition improvement (higher FAN).

Fermentation Cellar:
